West Cork rock oysters. The mignonette is shallot, white-wine vinegar, a turn of pepper. That's all.
From a bakery on Capel Street. The butter is Doire. It is a very serious piece of bread.
The bird was brined three days. The celeriac cracks open at the table; under the salt it steams like a small animal. The gravy pools.
Butter lettuce, a dressing of lemon and olive oil made at the table. On principle it contains no cheese.
The pastry was pressed in at nine. The plums have been singing in the oven since you opened the door.
