Tuesday Supper

Martini — Vesper, cold

Lillet, gin, the smallest peel of lemon. Stirred, not shaken, which is not original.

A— "You made it. Come in, come in. Let me take that. No — really, the coat as well."
ii. to open

Oysters, six, with a single cold mignonette

West Cork rock oysters. The mignonette is shallot, white-wine vinegar, a turn of pepper. That's all.

M— "Is everyone — yes? — I'll just — sorry, D, behind you. Perfect. Good. Everyone has a glass?"
iii. a small thing

Cold salted butter & bread

From a bakery on Capel Street. The butter is Doire. It is a very serious piece of bread.

J— "You know what I always ask myself — and this is, god, this is not an original question — is whether there is such a thing as an honest life."
iv. the main

Roast duck, salt-baked celeriac, a pan gravy with orange

The bird was brined three days. The celeriac cracks open at the table; under the salt it steams like a small animal. The gravy pools.

D— "No — I think she doesn't talk to him any more. Since the — you know — the thing with her brother. Don't say anything."
v. a pause

Green salad, nothing on it

Butter lettuce, a dressing of lemon and olive oil made at the table. On principle it contains no cheese.

J— "I mean I love him. I do love him. I just don't think we — I don't know, I haven't said this out loud before — I don't think we like each other very much any more."
vi. something sweet

A tart, plums, burnt sugar

The pastry was pressed in at nine. The plums have been singing in the oven since you opened the door.

M— "Don't say anything — she's crying in the bathroom. No no, it's fine, it's the tart. It's just the tart. Pretend you didn't notice."
vii. to close

Coffee

Alone. Black.

— the clock 11:47 p.m. Coats are on the back of the sofa. Nobody wants to go home yet. Nobody knows how to say goodnight.
